Im not really sure if my high school has had any past foriegn exchange students from Mexico. I'm wondering how it works or how often they come up here :)

Do not exchange much money before you go or even after you get to Europe. All money changers charge a fee on top of their frequently inflated rates.
Instead, wait until you get to Europe and use your credit or debit cards at any ATM there to withdraw cash. The cash will come out in Euros (or whatever the local currency may be) and your card account will be charged in your own currency back home at a bank exchange rate usually much lower than at any money changer's.
If it'd make you feel better to have some pocket cash when you land in Europe, exchange only a small amount ($50 to $100) at your local bank before you. Then draw cash from ATM's as you go in Europe throughout your stay there.
I'm in Toronto and I'd be interested in finding a school for a traders license in foreign exchange.

My answer is if you are high school level.
You will definitely be the one to pony up the cash! Being an exchange student is expensive. A program can run between $5,000 and $10,000 depending upon country, length of stay and exchange organization. Rotary is the cheapest, but most competitive. Others do offer scholarships.
This fee usually will cover travel, insurance, orientations, placement in a host family and school, and administrative costs. You should be aware that your host family does NOT get paid for hosting you! It is strictly volunteer! They cover your room and food. You cover your personal and school expenses.
You should also know that while you can pick your country, you generally cannot pick the particular place WITHIN that country -- i.e. Tokyo.
